Introduction
Rotary rack oven installation preparation starts before the shipping date. The bakery needs a workable delivery route, adequate installation space, suitable services and a clear plan for reassembly and commissioning. A machine that fits its final position can still be delayed by a low doorway, an inaccessible connection or an unresolved exhaust arrangement.
Prepare one site file containing the selected model, approved drawings, packed and assembled dimensions, handling plan, utility schedule and responsibilities. Review that file with the supplier and the local installation team before dispatch. Check the exact delivered configuration rather than relying on dimensions or ratings from a similar oven.
This guide is a purchasing and coordination checklist. It does not replace model-specific installation instructions or the work of qualified local installers. The Hongzhong figures below are configuration references for discussion; the final quotation and approved installation documents should define the order.
Freeze the configuration that the site must support
An oven model alone does not describe all installation requirements. Confirm whether the order uses electric, gas or diesel heating, which controls are supplied, and whether any optional combination heating system is included. Record the tray and rack arrangement and identify accessories delivered separately.
Hongzhong offers electric, gas and diesel configurations, with gas/electric and diesel/electric dual-system options available for discussion. A change between those configurations can affect the services needed at the bakery. Resolve it before the electrical, fuel and ventilation contractors finish their designs.
Request a revision-controlled document set. Every drawing should identify the model, configuration and revision so that the building team and supplier are discussing the same equipment. If the order changes, ask which site provisions need updating. Mark superseded drawings clearly rather than leaving several conflicting versions in an email chain.
Model-specific documentation matters across the industry. Baxter, for example, publishes rack-oven manuals covering location, connections and ventilation as distinct installation topics. Those manuals illustrate the need for coordinated preparation; their dimensions and procedures must not be transferred to a Hongzhong oven. Source: Baxter OV310 operation and installation manual.
Compare packed dimensions with assembled dimensions
Hongzhong's current reference dimensions are listed below in millimetres, in length × width × height order. Confirm the orientation on the drawing before measuring a route or laying out the room.
| Model | Assembled reference, mm | Packed reference, mm | Net / gross weight, kg |
|---|---|---|---|
| HZ-R16 | 1450 × 1900 × 2400 | 1480 × 1980 × 2300 | 1400 / 1500 |
| HZ-R32 | 1860 × 2500 × 2400 | 1860 × 2850 × 2300 | 1700 / 1850 |
| HZ-R64 | 2200 × 2950 × 2400 | 2250 × 3000 × 2350 | 1900 / 2100 |
The top drive system and electrical cabinet are removed for packing. The lower packed height therefore does not mean the oven operates at that height. The assembled reference height is 2400 mm, and installation still needs the additional access and service space specified in the approved drawings. See the current rotary rack oven page.
Do not infer the total number of packages from this table. Confirm whether removed assemblies and accessories are included within the stated packing envelope or travel as separate packages. The final packing list should identify each package, its dimensions, mass and contents. That information is needed for transport booking and arrival planning.
Survey the complete delivery route
Measure clear openings, not nominal doorway sizes
Start at the unloading position and trace the equipment's route to its operating position. Record door openings, corridors, corners, ramps, thresholds, overhead obstructions and changes in floor level. Include temporary obstacles such as parked equipment or storage that must be cleared on delivery day.
A doorway's useful clearance can be smaller than its advertised size because of its frame, hardware or opening angle. Likewise, a corridor wide enough for a package travelling straight may not provide enough turning space. Provide measurements and photographs so the handling team can plan the actual movement.
Allow for the handling equipment and the movement method, not just the crate. Do not assume a packed oven can be tilted, lifted from any point or unpacked in any order. Obtain approved handling information and let a competent handling contractor select the method and equipment.
Resolve restricted access before dispatch
If the route is too small, ask the supplier what approved delivery or assembly options exist. Record any additional work, protection or specialist attendance required. Removing packaging or components without an agreed procedure can create new risks and may not solve the original clearance problem.
Assign responsibility for route preparation. Someone should confirm that agreed changes are complete before the truck is booked. A photograph of an open, measured route is more useful than a general statement that the bakery has “a large entrance.”
Reserve operating, maintenance and rack space
The oven footprint is only part of the working area. Plan the door swing, loading position, hot-rack movement, operator access and maintenance access. Keep these functions visible on the layout rather than representing the oven as an isolated rectangle against a wall.
Hongzhong currently states 500 mm clearance on each side. Treat that as one supplied clearance requirement, not a complete room design. Front access, overhead space, rear services and any configuration-specific requirements still need to be established. Confirm the final layout against the order documents and local installation assessment.
The HZ-R16 and HZ-R32 use one rack per load; the HZ-R64 uses two. All three default to 400 × 600 mm standard trays. Draw the intended rack path, including where loaded racks wait and where unloaded racks cool. Additional preparation and cooling racks need space even though they are not inside the oven.
Ask the site team to consider floor condition and load support for the selected equipment and movement route. Net machine weight, gross shipping weight and the loads created during handling serve different planning purposes. The weight table alone is not a structural assessment or a lifting plan.
Prepare the electrical schedule correctly
Distinguish heating power from auxiliary power
Hongzhong's listed electric heating ratings are 22 kW for HZ-R16, 53 kW for HZ-R32 and 70 kW for HZ-R64. Gas and diesel configurations list auxiliary electrical ratings of 2, 3.5 and 4 kW respectively. Auxiliary electrical power does not describe burner heating output.
The standard electrical specification is 380 V, 50 Hz, three-phase, with customization available. Confirm the required supply for the actual export order. A customer's different local voltage or frequency should be resolved in the configuration, documentation and nameplate, rather than left as an assumption for the installation team.
Ask for a complete connection specification
Provide the local installer with the selected machine's electrical documentation and connection requirements. Have the qualified installer assess the supply, protective arrangements, isolation and connection work for the site. Do not select cable or protection solely from a marketing table containing one power figure.
Clarify which loads are included in each stated rating, especially where optional systems or associated equipment are involved. Keep the approved specification with the site file and compare it with the delivered nameplate before connection. Any discrepancy should be resolved with the supplier before commissioning proceeds.
Send Your Installation Requirements. Share your room layout, access measurements, available electrical supply and proposed heating configuration so Hongzhong can review the information needed for your quotation.
Coordinate fuel, exhaust and air arrangements
Fuel-fired configurations need a site assessment based on the selected burner and fuel specification. Confirm the fuel type and obtain the connection and operating requirements for that order. Do not treat natural gas, another gas supply and diesel as interchangeable because they appear in one product-family description.
Hongzhong advises routing exhaust outdoors or to a suitable exhaust-treatment duct. The detailed design requires the selected equipment's instructions and qualified local review. Agree who designs, supplies and installs the required arrangements, including any interfaces with the building's ventilation system.
Keep the oven's different outlets and service connections identified on the drawing. An unlabeled drawing or a photograph of another installation can lead to incorrect assumptions about what must connect where. Request the specifications needed by the responsible contractor rather than guessing duct sizes or connection details.
Schedule a joint review if building services are being designed by several companies. Electrical, fuel and ventilation work should support the same final configuration. Record unresolved items and assign an owner before approving the equipment shipping date.
Clarify the water and steam-system requirements
Hongzhong describes a built-in water-reservoir evaporation system. That description does not, by itself, establish every requirement for filling, water quality, draining, servicing or connection. Ask for the selected system's instructions and define the provisions your bakery needs to make.
Explain the products you intend to bake and any planned use of steam. The supplier can then discuss the relevant operating configuration and trial requirements. Avoid assuming that a setting or steam programme demonstrated with one product is appropriate for every item on your menu.
Record who supplies any required water-treatment or associated components if they are specified for the order. Keep the maintenance responsibilities clear. Service access should remain practical after the oven is installed, rather than being blocked by a wall, storage area or another machine.
Plan reassembly and commissioning before arrival
Identify the work created by shipping preparation
Because the top drive system and electrical cabinet are removed for packing, agree on their reassembly arrangements in advance. Ask who will carry out the work, which instructions and tools are needed, and what checks must be completed before startup. Confirm any attendance requirements and the expected coordination sequence.
Do not schedule product production immediately after the truck unloads. The timeline should allow for receipt inspection, positioning, approved reassembly, service connection, required checks and commissioning. How long those steps take depends on the order and the state of the site; request a project-specific plan rather than a universal installation-time promise.
Establish a handover record
Use a commissioning checklist that links the installed equipment to the purchase order and identifies the responsible people. It should record the completed checks, outstanding work, documentation handed over and training provided. Follow the supplier's approved procedures for functional and protective-device checks.
Product application testing is a further step. Once the equipment is ready for approved operation, use agreed recipes and loading patterns to confirm the baking result at the customer's site. A completed electrical connection or an empty heating demonstration does not establish the finished quality of every planned product.
Prepare for shipment inspection and receipt
Before dispatch, compare the equipment and accessories with the agreed order. Request the final packing list, identifying photographs and the documents necessary for your shipment and destination arrangements. Hongzhong states that its pre-shipment checks include reviewing order requirements and accessories; ask what records will accompany your particular order.
At arrival, record visible package condition and package identification before unpacking. If there is damage or a discrepancy, document it and follow the agreed carrier and supplier reporting process. Avoid discarding packaging or separating unidentified parts before the issue is understood.
Keep removed assemblies, fixings, accessories and documents organised for the installation team. A package may appear complete from the outside while the installer still needs to verify every item on the list. Receipt inspection, shipment inspection and commissioning are related checkpoints, each answering a different question.
Assign responsibilities and define support
Create a short responsibility schedule covering unloading, route clearance, positioning, utilities, reassembly, commissioning, training and removal of packaging. Name the responsible organisation for each task and identify dependencies. “Installation included” is too vague if the buyer and supplier mean different services.
Hongzhong offers remote video guidance, with on-site guidance as an option. Confirm the chosen support arrangement, language, appointment timing and any costs in the quotation. Remote guidance still requires suitable people and conditions at the customer's location; it does not make unfinished building services ready for startup.
The standard warranty is one year. Extended warranty terms can be written into the quotation. Also confirm the start condition, coverage, exclusions, labour arrangements and reporting process applicable to the order. The duration alone should not be interpreted as a promise that every installation or service cost is covered.
Frequently asked questions
Can I plan the ceiling height from the packed height?
No. Hongzhong removes the top drive system and electrical cabinet for packing, so the packed height is lower than the assembled reference height. Start with the assembled drawing and add the access and service requirements specified for the order. Check overhead obstructions along the delivery route separately.
Does the oven only need 500 mm on each side?
The stated side clearance is one requirement, not the full space allocation. The design must also consider loading, door movement, services, maintenance, overhead work and the handling route. Ask the supplier and local installation team to review the complete layout for the selected configuration.
Can I connect a gas oven based on the auxiliary kW figure?
That figure covers auxiliary electrical power, not the burner heating requirement or the complete fuel installation. Obtain the selected configuration's electrical and fuel documentation. Have the relevant qualified local installers review the services and perform the connection work according to the applicable instructions and requirements.
Should I arrange installation after the machine arrives?
Plan it before dispatch. Access restrictions, building services and specialist availability can require advance work. Agree on the site-readiness requirements and installation responsibilities while the order is being finalised, then verify readiness again before transport is scheduled.
What should I send for a site review?
Provide a measured room layout, photographs of the unloading point and delivery route, clear doorway dimensions, ceiling obstructions, available services and the preferred oven configuration. Include the intended rack movement and the contact responsible for local installation coordination. Label estimated dimensions so they can be verified.
Conclusion
Successful rotary rack oven installation preparation connects the shipping package, operating machine and bakery services in one coordinated plan. Confirm the configuration, check the full access route, reserve working space and resolve service requirements before dispatch.
Use the final documents to assign responsibilities and verify readiness. That gives the supplier and your local team a shared basis for delivery, reassembly and commissioning, with fewer unresolved assumptions on arrival day.
